摘要
椰子油、橄榄油和大豆油按质量比0.3∶0.2∶0.5比例混合,制备富含不饱和脂肪酸的混合脂肪酸。以Sn-2位富含棕榈酸的猪油和混合脂肪酸为底物,通过固定化脂肪酶Lipozyme TL IM的酯交换作用制备母乳脂肪替代物。经单因素试验确定最佳反应条件为:猪油与混合脂肪酸质量比1∶2.0,加酶量10%,反应温度65℃,反应时间8 h。反应产物甘油三酯总脂肪酸组成及Sn-2位脂肪酸组成与母乳脂肪相似。
Fatty acid blend rich in unsaturated fatty acids was prepared using oil blend(mass ratio of coconut oil to olive oil to soybean oil 0.3∶0.2∶0.5).The human milk fat substitutes was produced through the enzymatic interesterification with immobilized lipase Lipozyme TL IM between lard in which palmitic acid at the Sn-2 position of its triacylglycerol backbone was abundant and the fatty acid blend.Single factor test was used to determine the optimal conditions as follows: mass ratio of lard to fatty acid blend 1∶2.0,enzyme dosage 10%,reaction temperature 65℃,reaction time 8 h.The total and Sn-2 position fatty acid composition of the product was similar to the human milk fat.
