摘要
白果中的氰化物可能引起食物中毒和过敏反应。以苦杏仁为对照,采用普鲁士蓝法、苦味酸试纸法和硝酸银滴定法对白果果肉及其胚、胚乳中的氰化物分别进行定性分析和定量测定。结果表明,3种方法均未能检测到供试白果样品中氰化物的存在。该结果可为白果的食用安全性提供理论依据。
It was reported that the cyanide in ginkgo seeds could cause food poisoning or an allergic reaction.In the present study,qualitative and quantitative analysis of the cyanide in whole ginkgo seeds,embryo and endosperm with bitter almonds as a standard of comparison was carried out by Prussian blue method,picric acid test paper method,and titration with silver nitrate,respectively.The results showed there was none cyanide in the seeds samples detected by this three methods.This may provide theoretical basis for safe consumption of ginkgo seeds.
