摘要
测定了鹿皮胶中氨基酸、油脂及重金属等成分的含量．结果表明，鹿皮胶油脂含量为0．58％；重金属含量（以铅计）为0．036mg·kg^-1；含18种氨基酸（包括8种人体必需氨基酸），总含量为74．45％．为以后对鹿皮胶功能的研究提供了基础资料．
We determined the amino acid, fat content as well as total heavy metal contents of the Deer skin glue. The results indicated that the fat content of the Deer skin glue was 0.58% , 18 different kinds of amino acids were detected, 8 of which are essential amino acids for human body and the total heavy metal content was 0. 036 mg ·kg^-1 （ determined by Lead）. We provide basic data for further study on the function of Deer skin glue.
