摘要 姜辣素与姜挥发油是生姜药食两用特性的体现者,在医药、食品等行业有极高的应用价值。本文综述了姜辣素与姜挥发油的化学组成,着重探讨了提取技术的研究进展,总结了药理作用的研究现状,最后讨论了二者的综合利用情况,力求为姜提取物的深入开发提供理论依据。 The flavour and medicinal properties of ginger are mainly due to gingerol and ginger volatile oil, hence they have extensive applications in pharmaceutical and food industries. This review outlines the chemical constituents of gingerol and ginger volatile oil, highlights the research on extraction, summarizes pharmacological properties and comprehen- sive utilization of ginger extract, aiming to provide theoretical basis for further study on ginger.
