摘要
本文在分析天然色素的安全性和功能多样性的基础上，对天然色素的分类、稳定性、提取方法、生理活性和应用情况加以阐述，为天然色素的研究和开发提供科学依据。
This paper is based on analysing natural pigments of the safety and function diversity, expounds the classification of the natural pigment , stability , extraction methods, physiological activity and application. It provides documentation for the research and development of the natural pigment.
