摘要 稻米是人类最主要的粮食作物,除了营养作用外,挥发性成分产生的气味是其重要的食用品质。综述了国内外大米挥发性成分风味品质的提取技术,对于研究其他谷物挥发性成分具有重要的借鉴意义。 Rice is the main food for human.In addition to nutrition of rice,aroma from volatile compounds is the important quality.The separation and isolation methods of volatile compound of rice at home and abroad are summarized,which is significant to study volatile compounds of other cereals.
