摘要
从不同红曲发酵产品中分离得到15株红曲霉纯培养菌株,经形态特征观察确定为红曲霉属(Monascus)中的4个种:红色红曲菌(M.ruber),紫色红曲菌(M.purpureus),红曲红曲菌(M.anka)及巴克红曲菌(M.barkeri)。从中发现一株具有较突出的红曲色素生产能力的菌株,用该菌种生产的红曲米色价为1532.69U/g。
Fifteen Monascus strains were isolated from different Monascus fermented products. Based on morphological characteristics, these strains were identified as 4 species of Monascus, M. ruber, M. purpureus, M. anka and M. barked. One of the isolated Monascus strains had excellent pigment-producing ability. The color value of the angkak made by this strain was 1532.69U/g.
