摘要
蛋白质组学是以生物体的全部或部分蛋白为研究对象,研究它们在生命活动过程中的作用、功能。发展至今已日趋成熟,目前已有希望成为解决肉品科学领域中诸多问题的有力工具。从三个方面介绍了蛋白质组学技术在肉品研究中的进展,并对其应用前景进行阐述。
Proteomics is a science in which the role and the function of all or parts of proteins from organisms were studied. Nowadays, the proteomics is becoming more and more mature and promising to be a powerful tool to solve many problems in meat science. In this paper, the research progress of proteomics technology applied in meat science was introduced from three aspects and its application prospects were also described.
