摘要
人造黄油是食品行业中不可缺少的重要产品,被广泛应用于糕点、饼干、快餐、糖果及冷饮等食品的生产中。概述了人造黄油目前的生产工艺和生产状况,并预测了人造黄油的发展前景。在人造黄油产业今后的发展趋势中,人造黄油产品将以不含反式脂肪酸的非氢化黄油为主。
As an important and obbligato product,its is extensively applied to the production of pastry,biscuit,snack,candy,ice cream and so on.In this paper,the product technics and situation of margarine were summarized,and developmental prospect was also forecasted with the tendency on using of non-hydrogenated butter mainly in the future.
