蛋清过敏原及其纯化方法研究进展 被引量:3

摘要 食物过敏是当今重大卫生学问题,鸡蛋同人们的日常生活密切相关,但它又是重要的食物过敏原,对婴幼儿的影响尤其突出。鸡蛋中过敏原成分的分析和纯化,对于建立特异性免疫球蛋白E检测方法及脱敏治疗非常重要。现对鸡蛋主要过敏原的研究进展及其纯化方法作一综述。
