摘要
基于人工合成色素在可见光区的光吸收及偏最小二乘变量筛选法,研制出合成色素速测仪器,并应用于饮料、糖果、果冻、调色酒等食品中合成色素的快速检测。速测仪具有便携、功耗低、操作简便、检测时间短并可同时对多种人工合成色素进行实时现场快速检测、检测结果准确等优点。对样品中5种食用合成色素柠檬黄、日落黄、胭脂红、苋菜红和亮蓝的检测结果显示,样品测定结果的相对标准偏差均小于±5%;回收率为75%~129%。检测结果与国家标准方法检测的结果相吻合,表明此仪器具有良好的精确度和准确性,可用于部分食品中人工合成色素的现场检测。
An apparatus for the rapid determination of synthetic edible pigment in food,such as beverage,candy,jelly and wine,has been constructed based on their UV-Vis absorption characteristics and partial least squares variable selection method.This apparatus presented advantages,such as portable,low power consumption,simple operation,short response time and excellent precision.Experimental results showed that,in the determination of 5 kinds of edible pigment,lemon yellow,sunset yellow,carmine,amaranth,brilliant blue in food,the relative standard deviations were in the range of ±5%,the recovery was 75%-129%,which corresponded well with the national standard method.The results indicate the apparatus is applicable for the rapid analysis of edible pigment in food.
