摘要 Walking through Taipei, one is immediately struck by the hundreds - if not thousands - of cooks who have set up a sidewalk stall that serves up one or twospecialty dishes to hungry diners hunched over makeshift tables. Sometimes there is no seating - customers line up by the dozens to takeaway their favorite Taiwan xiao chi, prepared by the cook in a kitchen the size of a closet.
