摘要 采用DNS比色法测定不同温度和pH值对β-葡聚糖酶活力的影响,研究结果表明,β-葡聚糖酶最适反应温度为50℃,最适pH值为4.8。在pH2.0和pH 8.0的缓冲液中浸泡4h后,酶活分别保留了73%和64%。说明β-葡聚糖酶能够耐受较强的酸碱性环境。 The effects of different temperature and different pH value on β-glucanase activity were investigated by DNS colorimetry.The results showed that the optimum temperature for β-glucanase was at 50 ℃ and the optimum pH value was 4.8.Soaping in buffering liquid(pH=2 and pH=8) for 4 h,β-glucanase activity remained by 73 % and by 64 % respectively,suggesting that β-glucanase could tolerate strong acid environment and strong alkaline environment.
