摘要
对荸荠的营养成分、理化特性及贮藏加工技术的国内外研究现状进行了综述,分析了荸荠资源研究中存在的问题,展望了今后研究的主要内容与方向。
The nutritional ingredients,physical and chemical properties,storage and processing technology at home and abroad of Chinese water chestnut were summarized in the paper.The existed problems of research on Chinese water chestnut resources were analyzed,and the main content and directions of research in the future were also previewed.
