摘要
不同种类的红曲中,含有许多不同的抗氧化物质,如Dimerumic acid、酚类、色素、他汀类等,都表现了较强的抗氧化活性,特别是Dimerumic acid,在较低的浓度就表现出很强的抗氧化活性。同时,通过保肝、抗疲劳、抗炎症方面的动物实验,红曲也证明了其应用价值。
Many different anti-oxidation substances,such as dimerumic acid,phenols,pigments,statins have been demonstrated to show strong antioxidant activity in the culture of different types of Monascus spp. One of the most important anti-oxidation compound is dimerumic acid,which shows strong antioxidant activity at a very low concentration. At the same time,Monascus culture shows the value of the liver protection,anti-fatigue,anti-inflammatory acitivity through the animal experiments.
