摘要
目的:研究扶桑花色素的抗氧化作用。方法:以VC、BHT作对照,通过测定扶桑花色素的还原力、抗卵黄脂蛋白的脂质过氧化能力以及清除.DPPH自由基、超氧阴离子自由基(O2.-)、羟基自由基(.OH)的能力,研究扶桑花色素的抗氧化活性。结果:扶桑花色素具有较强的还原力,对脂质过氧化有良好的抑制作用,同时具有较强的清除.DPPH自由基、超氧阴离子自由基(O2.-)和羟基自由基(.OH)的能力。结论:扶桑花色素具有较强的抗氧化能力,其抗氧化性随浓度的增大而增强。扶桑花色素有望作为天然抗氧化剂及功能性食品得到开发与应用。
Objective:To study on the antioxidant action of pigment from flowers of Hibiscus rosa-sinensis L.Method:Compared with VC and BHT,the antioxidant activity of pigment from flowers of Hibiscus rosa-sinensis L.was studied by measuring its reducing power,activity of decreasing the lipid peroxidation of yolk lipoprotein and scavenging effects on ·DPPH radical,superoxide radical(O2·-),and hydroxyl radical(·OH).Results:The pigment from flowers of Hibiscus rosa-sinensis L.not only has strong reducing power and significant inhibition effects on the lipid peroxidation of yolk lipoprotein,but also had a strong scavenging capacity on DPPH radical,superoxide radical(O2·-),and hydroxyl radical(·OH).Conclusion:The pigment from flowers of Hibiscus rosa-sinensis L.had a strong antioxidant ability and its antioxidant activity was improved with the higher concentration,it is promising to be developed and applied as a natural antioxidant and functional food.
