太湖鹅组织学特性研究及其与肌肉品质相关分析

Histology Traits and Correlation Analysis with Meat Quality of Taihu Goose

[目的]探讨太湖鹅肌肉组织学特性及其与肌肉品质的相互关系。[方法]以70日龄太湖鹅为试验材料,测定其常规肌肉品质以及组织学特性,并进行相关分析。[结果]无论是公鹅还是母鹅,胸肌纤维密度均极显著高于腿肌(P<0.01);肌纤维密度与肌纤维直径、肌纤维间距和肌大束间距之间均呈负相关,相关系数分别为-0.808,-0.540和-0.620;肌纤维直径与肌大束间距之间呈正相关,相关系数为0.546;肌肉肌纤维密度与肌肉pH值、系水力之间均呈显著正相关(P<0.05),肌纤维直径以及肌纤维间距与肌肉pH值之间呈显著负相关(P<0.05)。[结论]该研究为鹅肉品质选育改良提供了理论依据。

[Objective]To investigate the histology traits of Taihu goose and the correlation between histology traits and meat qualities.[Method]The common meat quality and histology traits of Taihu goose at 70 days old were measured.[Result]Whether the goose was female or male,the muscle fiber density were much higher than those of leg muscle（P0.01）.The correlation between muscle fiber density and muscle fiber diameter,muscle fiber density and muscle bundle gap,muscle fiber density and the distance between muscle bundles were-0.808,-0.540 and-0.620,respectively.However,the correlation between muscle fiber diameter and the muscle bundles distance was 0.546.The muscle fiber density had a significant positive correlation with pH value and water holding capacities（P0.05）,the muscle fiber diameter and muscle fiber gap had a significant negative correlation with pH value（P0.05）.[Conclusion]The results provided theoretical basis for breeding improved of meat qualities of goose.
