摘要
采用静态SPME萃取、GC/MS分离分析对4个茶树品种的针、扁形茶叶的香气成分进行了分析,共鉴定出38种主要的香气物质,其中碳氢化合物有2种,醇类有18种,醛类有5种,酮类有4种,酯类有6种,酸类有1种,杂氧化合物有2种。尽管各种茶样的香气组分,含量各有不同,但是主要成分基本相同。对比发现同一品种制成的两种茶叶,扁形茶的同种香气含量比针形茶的含量高,为这些品种适制茶叶种类的确定提供了理论依据。
Volatiles of needle and flat green teas made from four tea varieties were extracted by static SPME.38 aroma compounds were identified by GC/MS.Those were 2 of hydrocarbons,18 of alcohols,5 of aldehydes,4 of ketone,6 of esters,1 of acids and 2 of oxides.All samples contained the same main aroma compounds but with different contents.Comparing the same aromatic content of two sharps of tea sample made from commentarial,the flat's was better than the aciculae's.The result provided theoretical foundation for suitability of tea variety.
