摘要
超氧化物歧化酶(SOD)是一种广泛存在于动植物及微生物体内的金属酶,能催化超氧负离子发生歧化反应,有效清除机体内的超氧自由基,具有重要生理功能.本文概述了从动物血液中提取、纯化SOD的工艺,并探讨了其在食品领域的应用研究进展及存在问题.
Superoxide dismutase(SOD) is an important enzyme which is widely existing in the animals,plants and microorganisms.SOD has important physiological function,for example,to enhance the catalytic disproportionation reaction of the ultra oxygen anoin,and to effectively remove superoxide free radical in organism.In this paper,the extraction and purification of SOD from animal blood is mainly summarized.The development of SOD's application research in food and the current problems is also dicussed.
