瘤胃中不饱和脂肪酸生物氢化的研究进展 被引量:5

摘要 瘤胃微生物对饲料源性不饱和脂肪酸(Unsaturated fatty acid,UFA)的生物氢化作用,限制UFA向反刍动物产品中转化的效率,从而使乳脂肪酸组成的调控难以达到理想的效果。UFA作为一类具有独特作用的生物活性物质,在生物系统中具有广泛的生理功能。下面就瘤胃中UFA氢化发生的原因、参与氢化的瘤胃微生物及氢化的中间产物作一综述。 Biohydrogenation of unsaturated fatty acids(UFA) in feed by the rumen microorganism heavily limited the conversion efficiency to ruminant products,which makes difficult to manipulate milk fatty acids composition.UFA as one kind of unique function biological activity material,has a wide range of biological functions in biological systems.This paper reviewed the reason for biohydrogenation,rumen microorganism and intermediates in biohydrogenation.
