摘要
依据危害分析和关键控制点的系统管理方案对杭州千岛湖水产冷冻食品有限公司的斑点叉尾鮰(Ietalurus punetaus)鱼片生产工艺的各个环节进行各种危害分析,确定了生产的关键控制点(CCP)并建立了完善的HACCP体系,该HACCP体系的建立有助于提高企业的经济和社会效益。
The hazard in the processing channel catfish (Ietalurus punetaus) fillet were analyzed with the theories and methods of hazard analysis and critical control point (HACCP).The critical control points were determined and a HACCP system was established.The HACCP system have contributed to improving the economic and social profits of the enterprise.
