摘要
根据近几年来生物技术在食品工业中的应用发展状况，从利用生物技术改造和开辟食品资源，改善食品品质，改变传统的食品生产工艺，开发新的食品品种及其它方面的应用总结了其主要成就。
The paper
reported the application and the development of biotechnology in the fields of food industries for
the past several years.The main achievements were summarized on the development and the
amelioration of food, the improvement of traditional food production technology,as well as the
exploitation of new food resources by adopting modern biotechnology. Some focal points of the
study of the application of biotechnology in the food fields in the future were discussed.
