摘要
螺旋藻粉含有丰富的蛋白质、维生素和矿物质,含有丰富的不饱和脂肪酸如γ- 亚麻酸,天然色素如β- 胡萝卜素、叶绿素和藻青素。其必需氨基酸组成与 F A O 标准非常一致。螺旋藻对多种疾病都有疗效作用。本文以小麦标准粉为主要原料,添加0 .5 % ~2 .0 % 螺旋藻粉和其它食品添加剂,经科学的配方和工艺研制出的螺旋藻挂面,经分析测定其营养丰富、蛋白质含量12 .12 % ,含铁达6 .57mg/100g 。各项感官及理化指标均达到挂面质量标准。该产品呈兰绿色,淡海鲜味,耐煮,有咬劲,口感滑爽。
The nutriton and health function of spirulina is summarized in the paper.It is rich in protein,vitamins,minerals,unsaturated fatty acids such as γ-linolenic acid and a lot of activity materials.As a supplementary medicine,spirulina has remarkable and miraculous effects on various diseases.Nutritious spirulina noodle was processed by using wheat standard flour as raw materials and adding 0.5%-2.0% spirulina powder and other food additives.The main nutritional components of the noodle were analysed.The products is glue-green colour with light taste of sea food.The cooked noodle was of good bite and good mouth feel.
