摘要
米饭食味品质是大米品质中最重要的指标,虽然现在以稻米品质特征为基础的理论研究已经较深入,但稻米品质的根本问题还没得到解决。主要从指标评价和仪器评价两方面介绍了米饭食味品质的研究现状,提出了建立一套全面、客观、简单、快捷的评价体系的必要性。
The rice eating quality is a most important index in the rice quality. Though the theory based on rice quality characteristics has been lucubrated, but the essential issues of the rice quality are not settled. This paper mainly describes the current study on rice eating quality from the index- evaluation and the instrumental evaluation, and also proposes that it's very necessary to establish a comprehensive, objective, simple and quick evaluation system.
