三聚氰胺的毒性及其在畜产品中残留规律的研究进展 被引量:4

摘要 继2007年美国发生的宠物"毒粮"事件后,2008年的婴幼儿"毒奶粉"事件以及鸡蛋中三聚氰胺(melamine,MEL)含量超标事件相继爆发,MEL成为了饲料与食品安全问题中备受关注的焦点。近两年来国内外学者对MEL开展了大量的研究工作。本文综述了MEL的理化性质、毒性、代谢及其在畜产品中残留规律的最新研究进展,以期为开展肉、蛋、奶等畜产品中潜在危害因素的排查与预警、加强饲料安全监管与立法、保证食品安全等提供参考。 Since the outbreaks of the pet food contamination scandal in America in 2007,the excessive melamine eggs incident,and the melamine-tainted-milk powder incident in China in 2008,melamine has received considerable public concerns,especially in feed and food safety industry.A great deal of work on melamine has been carried out by researchers in recent two years.This article has mainly reviewed the latest progresses in physico-chemical property,toxicity,metabolism,and residues of melamine in animal products,which can establish the theory reference for inspecting and early warning of the potential hazards of animal products such as meat,eggs and milk,as well as,enhancing the feed safety supervision and legislation and ensuring food safety for human.
