摘要
太阳蛋也叫清煎蛋,是西式快餐中的主要食品.它的特点是,制作方便、造型美观、食用快捷、营养丰富,十分迎合都市人的快节奏生活,有十分广泛的工业生产前景.通过对太阳蛋原料及工艺流程的技术分析研究,利用正交实验,探讨制作工艺的最佳方式,从而确定最佳口味及最佳生产条件.
“Sun egg” is also called plain fried egg, which is a main kind of food in Western snacks. The features of sun egg are convient in making, beautiful in style, fast in having, and rich in nutrition, which cater to the needs of fast pace of citiens and it has a bright future for industrial production. By the study of sun egg materials and its processing technological analysis, by orthogonalty tril and probing into the best way of processing technology, we can decide the best flavour and best conditions for production.
