摘要
烹饪史属于饮食文化的技术体系,因而它的分期应以技术体系的特点为依据,即可将烹饪史分为火炙、水熟和油制三个阶段。
Cuisine history is grouped in the technology system of food culture, therefore, the stage division of cuisine history should be based on the characteristics of technology system, e. i. the stages of cuisine history might be divided as fire roasting, water preparation and oil process.
