摘要
脂肪酶按其对底物的特异性不同可分为非特异性酶、1,3—定向酶和脂肪酸特异性酶,在食用油脂工业上具有较大应用价值的是1,3—定向脂肪酶。介绍了脂肪酶(主要是1,3—定向脂肪酶)在油脂水解、酯交换和生物精炼三个方面的应用原理、特点及实例。
According to the different Selectivities on the reaction objects,lipases can be classified into three sections:non-selective lipase,sn-1,3-specific lipase,and fatty-acid-selective lipase.The Sn-1,3-specific lipase is more worthy than the others to be used in the edible oil industry.In this paper,the principles,characteristics,and applied examples of lipase-catalyzed oil hydrolysis,interesterification,biorefining of oil are introduced,form which the brilliant prospect of lipase-catalyzed technology applied in the edible oil industry can be revealed.
