大曲质量好坏直接影响产酒的质量和产量,大曲质量受自然气候、制曲原料、曲面粗细度、制曲水分、踩制压力等因素的影响。常见的曲皮现象有干皮、烤皮、淹皮、阴皮、生酸卧死皮几种,减少曲皮的产生是提升优质率的关键途径。
Daqu quality will directly influence liquor yield and liquor quality. The factors influencing Daqu quality include climate, starter-making materials, the crudeness or fineness of starter surface, starter-making moisture content, stepping pressure etc. The common starter skin phenomena include dry skin, roasting skin,wetting skin, shady skin, and dead skin etc. The prevention of the above skin phenomena is the most effectively approach to improving the quality rate of Daqu.
