蜂蜜搀假糖浆检测技术研究进展

摘要 搀假是蜂蜜产品存在的最为普遍的质量问题。在蜂蜜中掺入糖浆是最常见的蜂蜜搀假方式,也是蜂蜜搀假检验的核心。本文对蜂蜜搀假糖浆的检测方法进行了分类,并主要介绍了^13C/^12C同位素比率法、双果糖酐法、差示扫描量热法、傅里叶转换-拉曼光谱法、水平衰减全反射傅里叶变换红外光谱法、高效阴离子交换色谱-脉冲安培检验法等方法,同时也提出蜂蜜搀假检验技术存在的问题及未来发展方向。
