金属离子对木聚糖酶制备阿魏酸糖酯的影响 被引量:3

摘要 采用木聚糖酶制备小麦麸皮中的阿魏酸糖酯。结果表明:添加金属离子会明显影响木聚糖酶的活性,K+、Ca2+、Mn2+、Ag+、Zn2+、Co2+对木聚糖酶有激活作用,其中Mn2+、Ag+、Zn2+、Co2+有较强的激活作用;而EDTA、Sn2+、Fe2+、Fe3+、Hg2+、Mg2+对木聚糖酶有抑制作用,而且高浓度的金属离子也会抑制木聚糖酶的活性。在制备阿魏酸糖酯时添加一定浓度对木聚糖酶有激活作用的金属离子,可以降低木聚糖酶的添加量。 The feruloyl oligosaccharide was prepared from wheat bran by xylanase. The results indicated that the activity of xylanase was strongly affected by metal ions. K^+, Ca^2+, Mn2+, Ag^+, Zn^2+, and Co^2+ could activate xylanase, and Mn^2+, Ag^+, Zn^2+ and Co^2+ showed stronger promoting effect. The activating effect of Zn^2+ was positively dependent on its concentration within a certain range, but excessively high concentration inhibited the activity of the enzyme. However, EDTA, Sn^2+, Fe^2+, Fe^3+, Hg^2+ and Mg^2+ were inhibitors of the enzyme. Less xylanase was required when adding a certain concentration of metal ions during preparation of feruloyl oligosaccharide.
