酿酒酵母对白酒丢糟酸水解糖液的耐受性探讨 被引量:8

摘要 主要研究了以白酒丢糟为原料,经过浓硫酸降解所得的水解糖液能否直接用于酒精发酵的问题。将水解糖液浓缩至葡萄糖浓度为35.7g/L,经S.cerevisiae 1300发酵24h后产生的酒精浓度为15.6g/L;选育S.cerevisiae 1300-L作为水糖解液的发酵酵母,水解液浓缩至葡萄糖浓度71.5g/L,发酵24h后产生的酒精浓度为33.8g/L,与亲本S.cerevisiae 1300菌株比较产酒精能力提高10.8%。结果说明白酒丢糟的水解糖液可以直接用于酒精发酵,且驯化选育能够进一步提高酵母菌株的发酵能力。 The paper reseached on waste fermented grains,which was saccharified by concentrated sulfuric acid to hydrolysate.And then we studied the feasibility whether the acid-hydrolyzed sugar liquor could be used to ethanol fermentation.The evaporated concentration of glucose(35.7g/L) was frstly used for the investigation of the course of ethanol fermentation by S.cerevisiae 1300.The fermentation by S.cerevisiae 1300 of a hydrolysate medium containing 35.7g/L glucose gave 15.6g/L ethanol in 24h.S.cerevisiae 1300-L was obtained by adaptation of S.cerevisiae 1300 to the hydrolysate medium,and 33.8 g/L ethanol was produced by S.cerevisiae 1300-L in the fermentation with the hydrolysate medium containing 71.5g/L glucose,which was about 10.8% increase in ethanol production compared to its parent strain.
