西北地区原料奶沙门氏菌污染程度鉴定与分析 被引量:7

Analysis and identification on contaminated status of microorganism in raw milk in northwest regions

摘要 沙门氏菌(Salmonella)是一类广泛分布于自然界,对人和畜禽健康构成极大危害的革兰阴性肠道致病菌。在世界各地的食物中毒病例中,由沙门氏菌引起的食物中毒事件位居前列,已严重威胁着消费者的身体健康,造成了巨大的经济损失。在西北地区选取3个有代表性的乳品厂,对该地区原料奶中沙门氏菌的存在情况进行了鉴定,检出率为1.3%,并检测了该地区原料奶中菌落总数及大肠菌群数。结果显示:3个乳品厂样品菌落总数合格率均在70%以上,奶源质量相对较好;从大肠菌群数来看,X2乳品厂平均值<334MPN/mL,而X1乳品厂平均值≥690MPN/mL,X3乳品厂平均值≥382 MPN/mL。可见X2乳品厂奶源质量最好,个别原料奶样品受粪便污染程度较高。但部分地区奶源状况不容乐观,需要给予关注。 Salmonella,which is widely distributed in nature,is a kind of Gram-negative gastrointestinal pathogen.As one of the most numerous food poisoning accidents,Salmonella has been seriously threatening the health of consumers,and has brought about great economic losses.Three representative diary factories of northwest regions were selected to identify the existence of Salmonella in raw milk,and the detection rate was 1.3%,the total plate count and the total coliforms detected at the same time.The result indicated that the qualified rate of the total plate count of raw milk was beyond 70%,therefore the quality of the raw milk in this region was comparatively high;Mean and only individual raw milk samples got seriously contaminated by excrement.The microorganism contamination condition in raw milk was unoptimistic in some regions.The quality and safty of raw milk should be given a certain extent consideration.
