壳聚糖处理对加工番茄活性氧代谢的影响 被引量:1

Effects of Chitosan Treatment on the Active Oxygen Metabolism of Processing Tomatoes

摘要 研究用0.5%、0.75%和1%的壳聚糖溶液对加工番茄涂膜处理,在常温下贮藏。贮藏期间每7 d测定与活性氧代谢相关的超氧化物歧化酶(SOD)、过氧化氢酶(CAT)、抗坏血酸过氧化物酶(APX)和过氧化物酶(POD)的活性以及超氧阴离子(O2-·)的产生速率,研究其变化趋势并进行分析,得出壳聚糖涂膜最佳浓度为1%。 In this paper, with 0.5%, 0.75% and 1% chitosan solution coating on the processing tomatoon, storage at room temperature. Determination of superoxide dismutase (SOD), catalase (CAT), ascorbate peroxidase (APX) and peroxidase (POD) activity and superoxide anion (O2^- · ) of production rate each 7d during storage, to study and analyze trends. Experimental results show: 1% chitosan concentration, can effectively inhibit the processing tomato CAT, POD, SOD, APX activity decreased and the rate of superoxide anion production and delay cell aging during storage.
