摘要
花糯饭是一种以优质糯米为主要原料,用多种天然植物提取的食用色素将其染色、按传统烹饪方法加工而成的彩色糯米饭。在壮族聚居的地区,花糯饭俗称为五色饭、花米饭、花饭或乌兰饭等,是非常重要的壮族节庆食品,其颜色通常有黑、红、黄、紫、白五种。在不同的地区,由于人们的喜好及生活习惯不同,色彩往往会有一些变化。比如增加绿色、青色或其他颜色。或者,有时候由于找不到相应的色素原料等原因,也会减少其中的一些颜色,从而使花糯饭的制作出现个性化的倾向。
Long history it has,HUA-NUO-FAN(flowers waxy rice) is one of the famous festival foods of Zhuang peoples' traditional festival,SAN-YUE-SAN.It is also an important offering of ancestor worship at the time of tomb-sweeping day.Through culture study,field investigation and literature survey on Zhuang peoples' living customs in Guangxi province,the cooking skills of HUA-NUO-FAN in main settlements of Zhuang peoples' were collected and ordered by the authors.The cultural connotations,therapeutic function,the traditional art inheritance and protection of flowers waxy rice were analyzed and discussed in this paper.
