摘要
糙米是最有发展潜力的全谷食品之一,是当前受欢迎的集营养、保健于一体的功能性食品。概述了糙米研究的起源和历程,介绍了目前糙米的主要应用研究方向,指出了糙米研究中存在的问题,展望了糙米的发展前景。
Brown rice is one of the most promising whole grain foods, it is the functional food which combines nutrition and health as one. In this paper, the origin and status of brown rice research are mentioned, the primary application directions and partial produce processes currently are recommended, and the existing problems about the brown rice studies are pointed nut, the development prospects of brown rice are put forward.
