摘要 本文从阐述米制品加工学科研究的内容和特点、该学科的定位和性质以及米制品加工发展历史入手,分析了米制品在国民经济生活中的重要地位和作用,阐明米制品加工学科发展的重要意义。从稻米组分与结构、稻米淀粉糊化、稻米淀粉老化与凝胶化、稻米的储藏与熟化、大米发酵、螺杆挤压技术六个方面,论述了国内米制品加工学科基础理论研究进展,还论述了米制品产品的研究与开发、米制品加工技术和装备研究与开发、米制品深加工的综合利用研究、米制品质量与检测技术研究等方面国内近年来的发展现状。通过对米制品原料基础性研究、米制品的产品开发、新型米制品产品的研制、米制品加工技术装备研制等方面的国内外发展比较分析,提出国内现阶段的优势和不足,以期为我国米制品加工学科发展的前景和机遇提供借鉴,并针对我国今后发展目标和重点领域进行了探讨和建议。 This article summarizes the content,feature,orientation and character of the subject field of rice processed products.After introducing the history of rice processing industry,the paper states that this industry has been making great contribution in our country economy,thus enhancing the subject field of rice processed products is of important significance.The paper illuminates domestic advance in the relative theory research according to six subjects:rice composition and structure,rice starch gelatinization,rice starch aging,rice storage and aging,rice fermentation,and extrusion technology.The paper also discusses the development in rice processed products,rice processing technology and equipment,rice deep processing and utilization,and product quality standardization and analysis.Presenting a comparison between home and abroad in raw material research,product development,new product innovation,and rice processing technology and equipment,our current advantage and shortage are put forward,hoping to provide a reference about the foreground and opportunity of developing our subject field of rice processed products.The development goal and important fields in the future are discussed.
