摘要
由于夏季气温高,入池温度、酸度等不容易控制,是白酒生产的困难时期,因此控制好工艺参数就显得尤为重要。我们利用正交试验的方法对夏季生产的用曲量、发酵周期进行了研究,确定了较为适宜的工艺参数。
As the high temperature in summer,the temperature of pit entry and the acid were difficult to control.Summer was the difficult times of liquor production,so the good control of process parameters was particularly important.The amount of starter and the fermentation period were researched by the orthogonal experiment,and the optimal process parameters were decided.
