摘要 α-淀粉酶作为一种重要的工业酶制剂,在工业生产中应用十分广泛。对近年来报道的有关温度、pH、碳氮源、金属离子、微量元素、溶氧、发酵工艺等影响α-淀粉酶发酵生产的各种因素进行了综述,旨在为指导α-淀粉酶的工业生产和进一步提高生产效率提供参考。 α-amylase has a broad spectrum of industrial applications as an industrial enzyme.In this review,factors that influence fermentation of αamylase including temperature,pH,mental ions,trace elements,nitrogen and carbon sources,concentration of dissolved oxygen and fermentation process were summarized.
