摘要 菊糖果糖转移酶(inulin fructotransferase,即InulaseⅡ)[EC 4.2.1.93]是指将菊糖水解为双果糖酐Ⅲ(DFAⅢ)的一种酶。文中对菊糖果糖转移酶的产生菌种、发酵工艺、分离纯化、酶学性质、酶解产物(DFAⅢ)生理功能等进行了综述。 Inulin fructotransferase is an enzyme which hydrolyzes inulin into DFA Ⅲ. In this paper, the screening of inulin fructotransferase-producing strains, fermentation of inulase Ⅱ, isolation and purification, enzymatic properties, physiologic functions of its enzymatic product (DFA Ⅲ) were reviewed.
