摘要 利用1H-NMR技术对植物蛋白饮料进行品质检测,采用CPMG脉冲序列获得样品的T2数据。实验表明,可以利用1H-NMR技术检测样品脂肪含量和水分含量的变化情况。T22反映的是样品中脂肪含量的变化,T23反映的是样品中水分含量的变化。随着花生奶浓度的不断降低,T22峰积分面积比例呈线性下降趋势,T23峰积分面积比例呈线性增长趋势,通过拟合公式可以得到样品相对应的脂肪含量及含水量,从而快速、准确判定样品品质是否符合国家标准。 In this paper, the ^1H-NMR technique were used to detect the concentration of vegetable protein beverage and T2 were obtained by CPMG pulse sequence. The results showed that ^1H-NMR technique can be used to detect the change of fat and water content of vegetable protein beverage. T22 reflects the variation of fat content. T23 reflects the variation of water content. With the decrease of peanut milk concentration, T22 integral proportion decreased while T23 integral proportion increased. The fat content and the water content of vegetable protein beverage can be forecasted by regression equation to quickly and accurately determine whether the quality of the sample in line with national standards.
