The food quality is related to safety of people＇s lives and the determination of the food quality is mainly based on food inspection data. Therefore, improving the accuracy of food inspection data is an important part of ensuring food quality. This paper describes several control links, including the sample extraction and preparation, calibration of instrument equipment and measuring instruments, option of reagents and test methods, control of laboratory environment and operating level and inspecting capability of operators and explores the factors of accuracy of food inspection.
