摘要
食品的质量安全关系到人民的生命安全,而对食品质量进行判定的主要依据是食品的检验数据。因此提高食品检验数据的准确性,是确保食品质量的重要环节。简要介绍了从样品抽取与制备、仪器设备和计量器具的校准、选择试剂和检验方法、控制实验室环境、操作人员的水平及对相关检验项目的检查能力等主要控制环节,探讨了影响食品检验准确性的因素。
The food quality is related to safety of people's lives and the determination of the food quality is mainly based on food inspection data. Therefore, improving the accuracy of food inspection data is an important part of ensuring food quality. This paper describes several control links, including the sample extraction and preparation, calibration of instrument equipment and measuring instruments, option of reagents and test methods, control of laboratory environment and operating level and inspecting capability of operators and explores the factors of accuracy of food inspection.
