简要地阐述了设计小型双锅真空油炸设备对开展真空油炸食品工艺研究、提高产品质量、降低成本、拓展真空油炸食品市场的现实意义和作用,并较详细地介绍了该设备的设计思想、工作原理和双锅体的真空油炸釜、网篮、油过滤器等主要结构及其特点。该设备采用单片机作为控制核心,PC机作为监控。它既可作为模拟试验装置。
The authors discuss the practical significance and function of studying the technology of vacuum oil frying products,improving the quality of products,reducing the cost and expanding the market.They also expound the working idea,working principle and the structure characteristic of the equipment in detail.The equipment is controlled by an electric device.This equipment not only can be used as test equipment but also can provide a basis for developing a kind of complete new type industrial equipment.
