摘要
本文对牛乳UHT处理前后所含芽孢杆菌进行分离鉴定。经鉴定牛乳UHT处理前嗜热芽孢杆菌有4种、嗜温芽孢杆菌有5种,UHT处理后仅有4种嗜热芽孢杆菌。可见超高温灭菌可以杀死牛乳中的嗜温菌,实现商业无菌,但不能杀灭嗜热芽孢杆菌。
This paper focuses on the isolation and identification of Bacillus in milk before and after UHT.The results showed that four thermophilic bacillus and five kinds of mesophilic bacillus were identified before UHT.And four thermophilic bacillus were identified after UHT.It can be conclused that UHT can sterilize the mesophilic bacteria in milk and realize commercial sterile but can not deactivate thermophilic bacillus.
