不同杂交组合太行野猪的肉质特性研究 被引量:2

摘要 为给野猪资源的开发利用提供依据,选用太行野猪为父本,杜洛克猪、长白猪、大白猪、太湖猪等为母本,设置4个杂交组合,野猪血缘均为50%。对各组试验猪的各项指标进行测定:日增重为478.6~706.9 g,料肉比3.35~4.18,胴体重50.0~85.2 kg,屠宰率64.3%~73.7%,后腿率33.1%~42.4%,眼肌面积30.17~39.50 cm2,均膘厚2.78~3.49 cm,瘦肉率49.6%~55.4%,平均肉色评分3.00~3.24分,大理石纹评分3.09~3.41分,pH值5.99~6.04,失水率10.29%~21.18%,熟肉率74.94%~83.07%,粗蛋白62.92%~68.04%,粗脂肪20.86%~25.60%。结果表明:太行野猪与家猪品种进行杂交,不仅可获得较高的猪生长性能和饲料利用率,同时能获得更好的胴体及肉质性能。 To provide evidences of exploiting and using Taihang wild boar resources,the test designed 4 cross combinations by taking Taihang wild boar as male parent,Duroc Pig,Large White Pig,Landrace Pig and Taihu Pig as female parent,with wild boar consanguinity ratios 50%.Records of growth performances and finishing abilities and dressing procedures of the experimental pigs showed that average daily gain 478.6-706.9 g,feed conversion ratio 3.35-4.18,carcass weights 50.0-85.2 kg,dressing percentage 64.3%-73.7%,hinder leg percentage 33.1%-42.4%,loin eye area 30.17-39.50 cm^2,mean back fat thickness 2.78-3.49 cm,meat percentage 49.6%-55.4%,meat color score 3.00-3.24,marble score 3.09-3.41,pH 5.99-6.04,water loss percentage 10.29%-21.18%,cooked meat percentage 74.94%-83.07%,crude protein 62.92%-68.04%,crude fat 20.86%-25.60%.The results indicated that Taihang wild boar crossed with pigs not only obtained higher growth rate and food utilization,but also had better performances of carcass and meat qualities.
