In recent years activities aiming to defend the local food have been developing vigorously in different parts of our country.This paper expounds its connotations,examples,causes and strategies in the hope that such activities should include not only the influential dishes such as the＂Four Dominant Culinary Schools＂,＂Star Restaurants＂,＂Big-Bowl Boss＂and＂Renowned Dishes＂but vulnerable non-mainstream dishes as well so as to contribute to the harmonious development of the cuisine industry.
