摘要 以采自吉林省通化石湖林场的天女木兰叶片为研究材料,对天女木兰色素提取工艺及色素稳定性进行了研究.结果显示:采用纯乙醇作为提取剂提取干叶中的色素效果最好;运用正交试验,确定了天女木兰色素提取的最佳工艺条件:温度40℃、时间4 h、m(固)∶V(液)为1∶30(g/L);在色素稳定性试验中发现天女木兰色素受光、温度和pH的影响都很大,而在常用山梨酸钾防腐剂中可长时间保持良好的稳定性;天女木兰色素在不同浓度的糖溶液中也具有较好的稳定性. The leaves of Magnolia sieboldii collecting from Shihu Forest Farm of Tonghua city in Jilin Province as research material,the stability and extracting technology of Magnolia sieboldii pigment is researched.The results showed that the best effect on pigment by using pure alcohol as extractant was obtained,the best extracting conditions were confirmed by using orthogonal experiment as follows:the temperature is 40 ℃,time is four hours,and the solid ∶ liquid is 1∶ 30(g/L).Based on the stability experiment of M.sieboldii pigment,the pigment is influenced by light and temperature and pH,the stability in staple preservative substance such as potassium sorbate is better,the same to that in different concentrations of sugar solution.
