摘要
血红蛋白着色剂是一种肉用着色剂,适于在鲜肉、火腿、灌肠、热狗等肉类食品中使用。将血红蛋白着色剂的特点应用在台式烤香肠中,结果表明血红蛋白着色剂用于台式烤香肠中能够起到着色的作用,且着色效果与添加亚硝酸钠的发色效果差别不显著。
Hemoglobin colorant is a kind of coloring agent for fresh meat,ham,sausage,and hot dog etc..Properties and applications of hemoglobin colorant in Taiwan fried sausage were introduced in this paper.The results showed that hemoglobin colorant had coloring in Taiwan fried sausage and the coloring effect was no obvious difference compared with nitrite.
