主要针对黄原胶的功能特性及火腿肠配方、工艺设计进行研究,确定各项工艺参数,使黄原胶更加合理地应用于火腿肠的工业化生产。
In this passage,it mainly focuses on the functional properties of xanthan gum,the formulation and the process parameters of ham sausage.The aim of this article is to make xanthan gum more reasonably applied in industrial production of ham sausage.
