摘要 对生姜和芫荽叶两种可食用精油的抗菌活性进行了研究。采用水蒸汽同步蒸馏法提取精油,以抗生素为参比,运用琼脂孔洞法测定生姜块茎和芫荽茎叶精油抗6种食源性致病菌和2种腐败真菌的抑菌圈直径。结果表明,生姜和芫荽精油均表现程度不等的广谱抗菌活性。生姜精油对肺炎克雷伯菌、志贺氏菌、金黄色葡萄球菌、黑曲霉和假丝酵母具有良好的抗菌作用,芫荽精油对黑曲霉表现出强熏蒸抗菌活性。这两种药食两用的芳香精油具有食品保藏潜在应用价值。 The antimicrobial activities of zingier rhizome and coriander leaves essential oils were primarily investigated.Steam distillation method was used to extract the plant essential oils from Zingier rhizome and coriander leaves,and the diameters of inhibition zones for antibiotics and two essential oils against six food borne pathogens and two fungi were carried out by disc diffusion method.It was found that both the two essential oils showed antimicrobial activity with different sensitivities in broad spectrum ways.Zingier rhizome oil showed strong antimicrobial effect against Klebsiella pneumoniae,Shigella dysenteriae,Staphylococcus aureus,Apergillus niger and Candida slbican,while coriander leaves oil possessed outstanding fumigant activity to A.niger.These two edible essential oils both display food preservative potentials.
